Fun, yummy and SO EASY!
For 12 x 30ml shots.
3 tbs lemon juice
200mls coconut milk
6 mango cheeks (fresh or frozen)
1 tbs gelatin*
*NOTE: Ensure you get a quality beef gelatin that is not hydrolyzed, otherwise it will not set.
Put the lemon juice, coconut milk and mango in a blender and blitz until smooth. Pour the mixture into a saucepan and bring to the boil. Add gelatin and whisk thoroughly to ensure no lumps form. Serve in shot glasses (or a silicon mould for easy serving). Chill for approximately one hour or until firm.
