Vladia’s High Protein Teff & Peanut Butter Cookies

INGREDIENTS for 26 cookies

1/2 cup uncooked teff grain (not ground)
1 cup coconut flour
1/2 tsp sea salt
1/2 cup maple syrup
1/2 cup coconut butter
1 tsp vanilla paste
1 cup crunchy peanut butter
1/4 cup cacao nibs
1/2 cup chopped pecans
26 whole pecans
2 eggs, whisked


Preheat the oven to 180°C and line a baking tray with baking paper. In a large bowl combine all the ingredients with ½ cup of hot water. Shape the mixture into walnut-sized balls, then flatten them gently with a fork. Top each flattened cookie with a whole pecan. Bake for 15 minutes, then cool slightly and serve 🙂
