Makova Torta filled with Raw Cacao Ganashe and Cherries by Vladia Cobrdova

This Feel Good Poppy Seed Cake is the bomb. Our COO and Wellness Ambassador Vladia Cobrdova has done it again with this oh too good to be true recipe. Nourishing on so many different levels!

“Makova Torta filled with Raw Cacao Ganache and Xmas Cherries”

Poppy seeds are heath food seeds rich in essential fatty acids they also are rich in calcium, potassium, phosphorus, and magnesium.

Poppy seeds also contain high levels of vitamin B, folic acid, thiamin, and riboflavin.

Poppy seeds are a great addition to baked and raw desserts, salads, smoothies, as crust on the fish or chicken too.

Ingredients:

  • 1½ cups Poppy Seeds
  • 1 cup of Almond Milk
  • 150g Organic Butter
  • 1 tsp Vanilla
  • 6 tablespoons of Coconut Sugar
  • 5 Egg Yolks
  • 1½ cups Almond Meal
  • 1 tsp Baking Powder
  • pinch of Salt
  • 5 Egg Whites

Top Icing Raw Cacao Ganache:

  • 3 tablespoons of Raw Cacao Powder
  • ½ cup of Coconut Milk
  • 5 teaspoons of Chia Seeds
  • 1 cup of Fresh Cherries

    Mix well in a bowl and let it sit in the fridge for 10 m

Middle Icing Lime Yoghurt Filling:

  • 4 tbs of Goats Yoghurt
  • 1 juice of Lime
  • Zest of 1 Lime
  • 3 teaspoons of Coconut Sugar
  • 3 teaspoons of Gelatin

Mix well in a bowl and let it sit in the fridge for 10 min

Instructions:

You will need to soak the poppy seeds in milk overnight.

Preheat the oven to 180°C.

Beat the butter, vanilla and coconut sugar until pale and fluffy. Beat in the egg yolks, one by one. Stir in the almond meal, baking powder, a pinch of salt and all the poppy seeds. Fold in the egg whites, beaten to stiff peaks.

You will need to use a small 18 cm round cake tin so you can make 2 x bases with this batter. Pour half of the batter into a greased tin with coconut oil and bake for 40 hour, or until just firm. Stand for 5 minutes, then turn out onto a plate and cool. Do the same with the second half of the batter.

To assemble the cake:

Lay the first base onto your cake stand – ice the top with yoghurt icing then lay the second base on top of the yoghurt filling and cover the top with cacao ganache and decorate with fresh cherries
