Slow Cooked Chai Beef Cheeks with Horseradish Cauli Mash RECIPE

This delicious recipe for beef cheeks has been written by our group wellness ambassador, Vladia Cobrdova, and it’s the perfect wholefoods dinner after a long day at work and the chilly nights we’re expecting in Sydney ahead 🙂

Marinate 3 beef cheeks in 1/4 cup of extra virgin olive oil, 2 cloves of crushed garlic and 1 cup of cold brewed aboutlife chai. Leave this in an airtight container in the fridge for 8 hours (or overnight).

Sear the beef cheeks in a pan with organic ghee then place in a slow cooker with the following:
2 large carrots, sliced
1 purple carrot (optional or any other root veg to hand)
1 large onion, cut into quarters
1 cup of red wine
500mls tomato passata
sprig of thyme
any stock you have to hand (the bone broth listed on this blog is ideal!)
marinating brew of chai, garlic and olive oil
salt and pepper

Cook in the slow cooker for 8 hours on high (this is a great recipe to throw together before you head out the door so that you come home to a delicious dinner ready to go – yum!)

For the horseradish cauli mash take a half head of cauliflower, soften the florets in boiling water, then blend with 1 fresh knob of horseradish that has been peeled and grated, 1 tbsp. of cultured butter and season to taste.

Serve and enjoy this nourishing rich bowl of goodness with a glass of red wine.
